Sometimes I feel so overwhelmed with work, running the blog, trying to maintain a social life, working out and all the other demands of life that the last thing I want to do is cook! .

Yup, the girl with a food blog and cookbook doesn't always feel like cooking. For a couple of reasons: I don't like cooking when I'm stressed or rushed, I like taking my time and enjoying it. To me, cooking is my form of art and stress steals the joy of it. Second, I hate eating the same thing for many days in a row! I get really bored and end up wasting food-at the same time, I'm not good at cooking small portions 😂

So what are some of my go-to foods for weeks like this?

For breakfast: fruits, eggs, smoothies, sausages (or veggie sausage), and Roasting veggies- I'll roast sweet potato slices and eat them with eggs or by themselves for breakfast. Cottage cheese with canned pears (in light syrup) or Greek yogurt, although I'm not a big dairy person so these I personally don't do often.

For lunches/dinners: I like to roast veggies with a bunch of herbs (like you would to meat) and then bake them and serve them with rice. I often buy veggie burgers and frozen veggies-then microwave both at work. I buy premade salads and add veggies too it (such as lettuce or broccoli slaw) since there never seems to be a big enough salad. I like buying wraps or frozen entrees from Trader Joe's- their wraps are delicious and their frozen Indian entrees are delicious and relatively healthy. I'll make a plain soup with broth, veggies and eggs. I'll bake chicken or fish and cover it in herbs and bake veggies with it. Or I'll make tacos using veggies, rotisserie chicken or black beans or eggs and salsa. I also like canned lentils and pan heating them with different herbs then pairing it with veggies or making them into tacos . .

yesterday I was talking to a friend who's going through a break up. hearing her talk from a broken place made me hurt. I think we can all relate to a time that we have felt alone, unwanted, + not enough. rejection is painful + our hearts are fragile in another's hands.

I've been reading a book + it's been casting SO much light on the parts of my heart I've tried to keep in the dark.
⠀⠀
I've been "that" girl. the one who wants the boy + the relationship SO bad. even when I KNOW it doesn't hold what I'm truly looking + longing for. you see "everyone else" in a relationship + the loneliness bug bites.
⠀⠀
so what do we do? we fight for people to stay. we try to prove our worth. we try to protect ourselves behind pride or sassiness (for me at least 😉) when in reality we're just scared to be vulnerable. we choose attention over intention + small talk over significance.
⠀⠀
then when it doesn't work out we assign traits to others based on our perceptions. and we tell ourselves that maybe we just weren't enough. I lived that cycle over + over.
⠀⠀
but things are different in this place. I've learned that alone does NOT mean lonely. my worth no longer comes from someone's acceptance of me. my worth comes from MY acceptance of me. + from the love of a God who's waited on me while I've looked everywhere BUT Him for a sense of love, worth, + acceptance.

now I want to love FROM a full place. not from a place of empty desperation. I want intention, meaning, + less convenience.

➖I don't have to chase a person or a feeling.
➖I don't have to be anxious about measuring up.
➖I don't have to worry about others walking away.
⠀⠀
what you focus on will make or break your identity. rip out the beliefs of rejection + inadequacy. replace them with the truths that YOU are enough + you are loved right where you are. why chase after what you can already give yourself?

if you're hurting in this season: you will be okay. you are accepted. you are loved. you are enough. ❤️

💁🏼I remember when I was a much younger human me & my brother attempting to making an "all in one cake " in the microwave in cups, unfortunately it did not end in the decadent delicious treat we were aiming for, I feel the best words to describe would be solid as a rock.

📒In fact potentially I think there may have been a firing across the kitchen incident as we tried to dislodge them 🤦🏼‍♀️Suffice to say neither of us became chefs 😂

👱🏻‍♀️Anyhoo I feel like you can't really go wrong with the omelette in a cup, if I can manage it anyone can. You can have all the stuff prepped the night before, then literally 5 minutes you done with only a cup for washing up 😀😀

😎You don't need to use these particular ingredients most normal omelette ingredients work just dandy. Oh and if you want to use 1 egg & then top up with the egg then crack on ( see what I did there 😂😂) -
❤️These babies are not the only thing I make in a cup, you will be amazed what google comes up with I made a mint a pretend apple crumble thing the other day 😀 fit as anything it was.

😁Also anyone who watches my story will know that I do sometimes eat out out of a cup, I'm not talking a full chicken dinner, more like Greek yoghurt & cereal. I find it's real swell trick for portion control.

Wanted to share a couple of quick tips regarding pre and post workout meals. If your goal is fat loss, focus on getting protein and healthy fats in your preworkout meals, so that your body can tap into your fat storage system for fuel during your workout. For muscle building, ensure to eat a combination of protein and carbohydrates. The amino acid in the protein sources play a key role in protein synthesis to help repair your muscle tissue. The carbs will help replenish the depleted glycogen and fuel growth.

If you have relatively low body fat % already (I.e, low teens), then by all means fuel up on carbs before your workout as they can provide much needed energy.

My meal prep items for the week. Steamed brussels sprouts - can be added to a fish plate or enjoy as a cold salad. White beans to be added to a pasta dish. Soya beans to be added to a beef dish or added to a salad and lastly some rapini vegetable greens to add to a pasta plate or as a side dish. Lots of options ready for my meals. Just need to grab and add to my meal. This weekend had some fun activities (post coming soon!) So I didn't have much time to prep for this week, plus it's a short week (yay!) So I didn't want to have too much food going to waste. .
1 lb ground turkey divided into 3 lunches (some was used for dinner), canned corn and same tajin. So easy and tasty.

Between the holidays coming up and the short week, I decided to keep this weeks lunches and snacks very simple: - turkey, cheese & mustard on whole wheat wrap
- veggies + hummus - honeycrisp Apple
- plain greek yogurt w/ honey
Easiest way to stay on track is to just keep it simple!
