Our take on the Paper Plane cocktail by Sam Ross from Attaboy in NYC & named after the M.I.A song. We use our mango concentrate to add a little tropical vibe to this modern classic. Made using fresh mango and cooking it under vacuum at 56 degrees to retain the raw taste of mango we are looking for. We then bottle this for service and use the bi-product for our mango slushies on our Non-alcoholic section of our drinks menu.
I’m really happy I was able to sit in on this kick ass seminar by @trashtiki today. These guys are finding great ways to use what most would call “trash” in their cocktails. Stretching juice, eliminating waste, and making things like avocado pit orgeat on the fly. Thanks for the lesson Ian and Kelsey!! #drinklikeyougiveafuck
