Inspired by the lovely @veganmona I felt obliged to try a Christmas-spiced dish!
This was a bowl made with sprouted chickpeas, frozen carrots and banana. Added gingerbread spice and merry vibes afterwards🌄☃️🌌

🌱VEGAN ZERO WASTE PICNIC🌱PART 1🌱 Zero waste journey is difficult, with ups and downs. 5 years ago we were better than now😔, we lived in Barcelona where loose shops are very common. In London it seems to be more difficult to find packaging-free food.

Anyway, I try my best 🙏🏻and my snacks and picnic look like this. I rarely buy ready meals because the plastic and the price (expensive). I spend very little a month. I much prefer the simplicity of eating food in its whole form🍎. But don't think I have always been like that. It has been a journey for me💫. I started to be conscious about what I was consuming about 15 years ago.

Something so simple but I was not being conscious: I used to carry my apples wrapped in kitchen paper or a plastic bag! 🤔Until I realised how silly that was and how easy it was to use a cloth napkin.

My favourite simple, cheap, easy to carry lunch are cut veggies🥕🥒 and a homemade kind of hummus and apples🍎better in recycled glass containers. It might look too little? It would have to me too some months ago but the way I eat now leaves me extremely satisfied and never ravenous👌🏼. It is the nutritarian or nutrient dense way of eating🌱🌱🌱.

5MIN CHOCOLATE ICE CREAM

It's easy to end your meal on a sweet note with this quick chocolate "ice cream". Keep some frozen bananas on hand so you are ready to whip it up whenever the mood strikes.

INGREDIENTS:
2 large ripe bananas (Freeze at least 8hrs in a sealed plastic bag)
1 teaspoon vanilla
2 tablespoons soy, hemp or almond milk
2 regular dates or 1 medjool date
1-2 tablespoons unsweetened cocoa powder

INSTRUCTIONS:
Add non-dairy milk, vanilla, dates and cocoa powder to a high-powered blender and start to blend. Drop frozen banana pieces in slowly. Add additional non-dairy milk if needed to reach desired consistency.

Cooking is done for the work week already! At least I can focus on my salads midweek now.

Ukranian sweet and sour cabbage soup on the left and my "whatever" soup on the right with mushrooms, whole grain brown rice, cranberry beans, carrots, onions, garlic, celery, leftover kelp shreds, and a ton of Mrs. Dash.
No added salt is key, and except for green tea, I've said goodbye to coffee. Like I said before, I DO NOT miss my heartburn or indigestion! Coffee put pep in my step, but I'd say I have more consistent energy now, only 11 days into this. I wake up clear headed without the need for coffee too, which is a real blessing.

I made another Mushroom Matar but this time we used wild rice to eat with it. This was so good! I love the spices! I have to admit I may have over done them a little bit however.
