ORANGE COCONUT FUDGE PATTIES
Chocolate Coconut butter - 1/2 c
Shredded unsweetened coconut- 1/4 c
Coconut Oil - 2 tbsp
Pure orange extract - 1/4 tsp
*
If you don’t like coconut, swap it out for crushed almonds or cashews, etc. Same for the orange extract. *
Just heat, mix thoroughly and spoon into muffin tins and freeze! Makes about 12. About 100 calories each

I figured i might need a little extra incentive to log my miles this month as the weather turns colder so I made some tasty treats. This version is “Pumpkin Spice Almond Treats”

Coconut butter - 1/2 c
Almond butter - 1/4 c
Coconut Oil - 3 tbsp
Pumpkin Spice - dash to 1/2 tsp
Nutmeg Spice - dash

Just heat, mix thoroughly and spoon into muffin tins and freeze! About 100 calories each and 100X better than a sugary manufactured candy

What’s your favorite dish?

This was one the best dishes i have ever had the pleasure of eating! A scallop tartare with olive oil, sea salt, finger lime and caviar! Unreal. Melt in your mouth. And #therewasntevenlobster

You can make a meal out of anything. And in my case, if all you have is #avoacado and #beets you make it work and love it

‘Day 116 - for some reason there’s still not any amazing food in the pot. Apparently just setting the pan on the stove next to the cookbook isn’t how good food happens...’. I bought another cookbook, still don’t like to cook.

Who said eating healthy is hard? I’m the type of person that doesn’t like cooking so, I always try to complicate myself with my meals. The less time I spent in the kitchen the better.

Some of you know I #dontliketocook, but I'm seriously trying to eat healthier and at home 🏡 So I found this cute little Naan bread... I mean it's really tiny... like sandwich size at @publix. It fits right in my toaster!! So I toast it and top it with homemade Cucumber Ham Salad. It's really delicious and provides that little bit of carb I need with a meal 🥘. Folks I was raised eating cornbread and biscuits!! There are good options for cutting back though, and these are fabulous!!
