I posted some process shots of this zuppa di farro last night in my #igstory as I was making it. I didn’t really use a #recipe but it is similar to other vegetable soups I make and it turned out delicious so I thought I’d share what I did here:

Chop/dice 2carrots, 2 small stalks celery, 1 onion. Finely chop a handful of flat parsley and some celery leaves if you have them. Cook these until softened in 3-4 tbsp EVOO along with a smashed clove of garlic and minced 🌶 pepper. Add 1 diced zucchini and 1 diced potato and cook 5-10 min, stirring, till potatoes begin to soften.

Stir in 1 bunch previously cooked lacinato (Tuscan) kale (I sautéed it in olive oil and a little water, with garlic, until tender).
.
Pour in enough water to cover by 1 inch and season with salt. Toss in a Parmigiano-Reggiano rind. Bring to a boil, reduce heat and simmer till all veg are tender.
.
Meanwhile, boil 1/2 cup rinsed farro in 2-3 cups saled water until just tender, about 20 minutes. Drain, then add the farro to the soup, along with 2 tbsp raw lentils and a generous squeeze of good tomato paste.
.
Cover partially and simmer gently until everything is well-cooked, adding a splash or two more water if necessary. Taste and adjust seasoning. Garnish with grated pecorino cheese and a drizzle of fresh olive oil.

Tonight’s naturally leavened focaccia has a bit of @gristandtoll charcoal wheat flour, given to me by @beetcolor. The flour is described as strong in gluten and high in protein, with a rich toasty flavor. Can’t wait to take a big bite.

The 🔑 to a good apple crostata is to use a mix of apples(sweet, tart, crunchy, soft) and to cook them first ~ not a lot, just to soften them a bit. Also, an all-butter pastry, or at least that's how I do it. Fill and bake until the crust is the color of toasted almonds.
