The rain couldn’t keep us from hitting the farmers market for his and her tamales. If you’re ever in Austin and happen upon a farmers market, you have to go to @tamaleaddiction and get the chicken mole tamales. My husband and I each dress it with a different sauce but both are equally delicious. If you swipe you’ll see my big ole bottle of kombucha: pomegranate Apple mixed with ginger 👌🏻. Can hardly keep my feet on the ground from excitement because I finished my dietetic internship! 🎉 Over 1300 hours of supervised practice completed while simultaneously going to grad school full time. Yesterday I wrapped up my final rotation with @ripecuisine. In a few weeks I’ll graduate with my MPH and will be that much closer to becoming a Dietitian!!

Then say hello to one of my fav breakfasts- with just 3 cheap ingredients and 4 food groups woo!

How to make: Melt butter in skillet. Microwave oats in water or milk. Whisk 2-4 eggs in a medium bowl. Take 2-3 old bananas and mash them with the eggs. Add the oats. Then add any additional ingredients.* Whisk together. Pour all this good stuff into the skillet and let it brown a little on the bottom, stir, and cook until it gets a little fluffy and cooked through. & ta-dahh, breakfast is served 💫

-Ingredients: some pancake mix for firmness, vanilla extract, cinnamon, blueberries, chia seeds.
-Toppings: maple syrup, coconut shavings, fruit, peanut butter, chocolate chips, whipped cream.

Gooooooood merrrnin ☀️ I survived my first weekend of work and it’s finally warm and sunny in MN! 🙌 For breakfast today I made some stovetop oatmeal (normally I just make it in the microwave) with cinnamon, vanilla, agave syrup, coconut chips, strawberries, almonds, and a little scoop of @konsylfiber daily fiber supplement. I buy the large containers of plain oatmeal instead of the packets that have a surprisingly high amount of added sugars! This way, you can customize the flavor to whatever you feel like having and get wayyy more bang for your buck. Oatmeal may help lower cholesterol levels and can assist in stabilizing blood sugars.
