150 Minutes to Empanada Heaven.
(Order Up, Part 21.)
Duck confit & smoked salmon empanadas (with fresh masa wrappers), salsa Tatemada.
Today was Mexican feast day at school, and it was amazing.
Some items like the chilaquiles and the empanada were not exactly foreign to me, but the grilled fish pescado al tala, was.
And it was delish, all of it.
And so ends Week 7. It's hard to believe, but I have one more week before technical training ends. Half of it will be exams galore, and I am feeling nervous as all hell.
The last time I was that nervous, I was getting ready to cook on camera.
This time, there's so much more at stake: an RSE, the first step on my road to Culinary Valhalla, is so close I can literally taste it.
This weekend will be filled with reading back all my year 1 and 2 module books, followed by another full on cram session for all of year 3. It's kind of like a blitz down memory lane, except there will be exams at the end.
Wish me luck, @masterchefcda fam. I'm going all in to bring home the first prize!

Going Hog Wild.
(Order Up, Part 20.)
Wild boar chop, savoury apple-Gruyère tarte, charred broccolini & Brussels sprouts, root veg medley, sauce Chasseur to finish.
Game Day (wild game, not sportsing games) has come and gone, and I personally think this was my best plate yet.
The boar chop was a bit pink on the inside (should've given it a little bit more of the ol' what-for on the grill), and the veg and sauce was okay, but I am most proud of the tart, which was something that I did to try to combine making a compote and a starch together.
It turned out a bit dry looking, but a little blood orange glaze & butter really made it look smashing. And that blitz made tart pastry? Yeah, baby. (It sure as hell won't win any baking awards but it sure was tasty.)
This ain't yo mama's pork and applesauce dinner, and it looked good doing that.

Last night I tried out @cibocalgary's $16 three- course Spaghetti Dinner, which is their special on Wednesdays. We started off with a Caesar Salad with croutons, white anchovy, guanciale, grana padano and crispy capers. Next up was the Lamb Meatball Spaghetti🍝 served family style, with cheesy garlic bread. And the Nutella Cannoli was the perfect sweet bite to finish the night. This is definitely an awesome deal. Made the slow-cooked beef brisket from @donna.hay's cookbook Basics to Brilliance for the #rainydaybitescookbookclub. Then 2 days later we made the brisket pot pies only I added in some sauteed diced potatoes and carrots. My pastry didn't puff up as high as I would have like but it still cooked to perfection and was the topping to a delicious meal.

I like to top my pot pies with fresh black pepper, sea salt and fresh herbs like rosemary before baking for an extra pop of flavour. This time I had no fresh herbs left so dried thyme was sprinkled on just before baking. Loving this cookbook!

We're getting started at @yycburgerbattle this year and starting to search for different burgers in #YYC. Our 1st meeting this year was at @redheadscafe and we're really hoping they apply for the competition with one of their great Japa Burgers. Cozy little Japanese cafe in downtown.

Pan seared halibut, Pernod-infused braised pork belly, shellfish medley and a crispy ramen ring, sauce Normande (creamy mushroom sauce with fish broth).
香煎大比目魚,大茴香洒燜腩, 貝殼大雜燴, 脆脆麵圈,諾曼第汁 (魚湯磨菇忌廉醬).
Today was "Incongruous Proteins Menage-a-Trois Day", and let's just say it was...interesting to say the least.
All I know is that I chose the correct classic sauce (the Normande), and nothing was raw. The reviews weren't exactly great, but they weren't completely terrible. The only major thing I found was the pork belly became far too tough...that in itself is going to give me a lot to think about.
Tomorrow, we move on to game day (No, not that kind of game. Wild game meats) and I drew wild boar chops.
That should be a fun one to make, since I've pretty much never dealt with game meats before.

You gotta remember to save room for dessert @twopennychinese. This Pineapple Bun Cream Puff with ginger & creme fraiche cream, caramelized pineapple, candied ginger toffee and pistachio ice cream was 👌. Definitely one of my new favorite desserts.
