Happy Sunday people! Despite having snow last weekend we are getting spring-like weather here on the Jersey shore this weekend! Was in the mood for something refreshing for breakfast and this came to mind: Bircher Muesli! Have you heard of it? Last month when my son and I were on holiday, this was offered every morning on the breakfast menu; apparently it is a classic breakfast staple in Norway 🇳🇴. My son was LOVING it but I resisted partaking because it was made with dairy. At the end of the week I finally gave in and tasted it, and, I admit, it was my breakfast every morning for the rest of the trip. 😬
This morning I made a dairy free version for both of us, and it was a big hit! I topped mine with blubs, strawbs, nanas, pom seeds and buckinis; I left his nekkid 🙈 so he could build his own 😘. It was light and refreshing, but very hearty and satisfying 😍
Here is my version of Coconut Bircher Meusli, give it a try 👍🏻 .
2 c rolled oats
1 2/3 c nut milk
1/3 c apple cider
3 T fresh lemon juice
1 c plain, vanilla or coconut nondairy yogurt
1 Green (Granny Smith) apple, cut into matchsticks
2 T (+/-) coconut nectar
1/4 c dried shredded toasted coconut
1/4 c sliced or slivered almonds
1/4 t cinnamon
Combine oats, nut milk, apple cider and lemon juice. Cover and refrigerate overnight.
In the morning add cut up apple, toasted coconut, almonds, coconut nectar (to taste), yogurt, and cinnamon. Mix well.
Serve chilled, with an array of fresh fruit, nuts and assorted toppings.
