This grand 19th-century Russian dish has found favour all over the world – and for very good reason. It’s robust and can be served as an everyday dinner, but it can also be an indulgent (we blame the sour cream) dinner party dish. We cook beef strips and add them to softened shallots, panfried mushrooms and sour cream that’s been flavoured with mustard, tomato puree and a dash of Worcestershire sauce.
