Crazy busy day, and had a very late dinner, but it was worth it to spend the time making it after I got home tonight, even if we didn't eat until 10pm!
Lunch: Turkey Sandwich - loaded with spinach, yellow tomatoes, avocado, and Swiss cheese. Served with cucumbers and some Roasted Red Pepper Dip
Dinner: Chicken Parmesan - Breaded with a mix of panko and whole wheat breadcrumbs, and 3 Onion Dip Mix, and topped with mozzarella and Parmesan. Served with rice, freshly made tomato sauce, steamed green beans, and roasted cauliflower
