Honey process, in between both of two previous introduced processes in this notes, also known as semi-washed process, named for the sticky, honey like consistency and not flavor. The cherry peel is removed but some amount of the fleshy inside, the mucilage, remains while the beans are dried. Moreover, depending on how much mucilage remains, we can find 80% called for Black honey, 60% Red honey, 40% Yellow honey, 20% White honey. This process technique is a limited, hands-on, and labor-intensive process. .

The upcoming new tasting coffee notes section, process, to be more specific, cherry processing. After harvesting, coffee cherries are processed as soon as possible to avoid spoilage, generally, there are three common methods used, washed/wet, natural/dry, and honey. The wet process, which is so called washed process in a more common way, the fruit skin is removed before dried, using water to both move the coffee fruit through the process and to extract the beans, that’s why we called it.
