▪ INGREDIENTS:
3 Chicken Breast, 3 Tortillas, 2 Tomato, 1Tbsp Butter, 1tsp Cumin Seed, 1/2 Minced Onion, 2Tbsp Minced Cashew nut, 2tsp Minced Garlic, 1tsp Garam Masala, Salt, 1/2Tbsp Sugar, 1tsp Red Pepper Flake, 150ml Water, 150ml Heavy Cream, A Bowl of Rice - Marinate: 2tsp Minced Garlic, 1tsp garam masala, 1tsp Chili powder, Salt, Pepper -
▪ DIRECTIONS:
1. Marinate the chicken breast with minced garlic, garam masala, chili powder, salt and pepper for 10 minutes.
2. Cook the chicken breast.
3. Butter the frying pan and sauté the minced garlic, minced onion, minced cashew nut, cumin seed and add minced garlic, garam masala, salt, sugar, red pepper flakes, then add diced tomato.
4. Add water and simmer for 30 minutes, then blend.
5. Combine blend sauce with chicken and heavy cream and simmer.
6. Butter the pan and lightly cook the rice.
7. Place rice and butter chicken on the tortilla, and roll.

INGREDIENTS:⠀
1 pound ground beef⠀
1 onion, diced⠀
4 tablespoons chili powder⠀
1 tablespoon cumin⠀
3 (15-ounce) cans roasted diced tomatoes with green chiles⠀
3/4 cup water⠀
3 (14.5-ounce) cans pinto beans, drained and rinsed⠀
Kosher salt and freshly ground black pepper⠀
⠀
STEPS:⠀
In a large heavy-bottomed pot over medium heat, add beef. Stir with a wooden spoon, breaking up the meat, until fat is rendered and beef is browned.⠀
Toss in the onions and saute until softened, about 3 minutes. Season with a large pinch of salt and pepper, and sprinkle in the spices. While stirring, toast the spices until fragrant, about 2 minutes. Stir in the tomatoes, 3/4 cup water and beans. Simmer on medium heat for 35 minutes, stirring on occasion, until thickened.⠀
Serve with chopped red onion, sour cream and grated cheddar cheese.⠀

Newest meal prep. Decided to go Latin and made some Ropa Vieja. Classic Cuban dish made with lean cuts of flank steak, unsalted beef stock, tomato paste, spices, and fresh diced veggies with Spanish olives. Traditionally served with yellow rice, I'll be serving it with brown rice.

There is nothing better than Ghar ka Khaana. A home cooked meal is full of warmth, love and sometimes precious little memories.
The combination of a certain dal with a certain sabzi that Nani always cooked, an accompaniment to a meal that dad loves, a special homemade spice mix that I learnt to make from my mother in law and just can't do without now. Cooking and eating a simple and wholesome meal like this, fills my heart with so much joy. Szechuan cumin lamb, and it's for real folks (swipe⬅️to see, recipe⬇️)

~1 lb boneless lamb (leg/shoulder/sirloin)
2 tsp* szechuan peppercorns
1 tbsp* ground cumin
1/2 tsp* crushed red pepper
1/2 tsp fresh ground pepper
fresh red chilis (opt)
sprinkling coarse kosher salt
1/2 white onion
1 bunch green onions, chopped
3 cloves garlic, chopped
1 tbsp soy sauce/tamari/coconut aminos
splash shaoxing wine
fresh cilantro

This low-carb recipe is modified from the NYT/Serious Eats writeups, but it's originally from the Xinjiang Uyghurs and predates Western civilization. Not for the faint of heart - there will be smoke and heat, so summon the will of the Khans.

Get cast iron. Use high heat oil (grapeseed/canola) and crank up the stove. Toast the szechuan peppercorns gently as the pan heats (bonus pts: toast whole cumin seeds). Remove when ready (you'll know by smell), and crush in a mortar. Scrape into a bowl, and add the salt and other spices. The guidelines for spices are variable - if your cumin or pepper are old, use more. Mix the spices all together in the bowl.

Tenderize the meat. Slice thinly against the grain. Add to bowl, mix to coat evenly. By now the pan should be blazing hot. Add the lamb in small batches, brown, remove. Cut the onion along the equator, take off the root stem, and slice into quarters/sixths. Peel out the triangles. Once all the meat is cooked, add the onions and fry in the browned oil for ~1 min. Add the chopped garlic, fry briefly.

Add all the meat back to the pan, stir everything. Add a large splash of shaoxing, then the soy. Fry until liquid is partially cooked off. Add green onions, stir briefly, remove all. Wash and chop a heap of cilantro, stir into meat, serve over white/cauli rice.

No sugar, no starch, no problem. This one's a bit more work than my usual posts, but totally worth it!

It's been... a long day. And this quick Black Bean Soup with Chicken was ready in under 30 minutes and is SO GOOD. Just saute a cup of diced onions, a cup of diced peppers and 3 cloves garlic in a tbsp of olive oil until soft. Then add a cup of canned diced tomatoes, a tbsp cumin, a tsp hot sauce, two cans of black beans with liquid and 8 Oz chicken breast, cut small. Simmer for 15 minutes. Add in a half cup of cilantro and cook another 5. Serve with sour cream and shredded cheese!
