Gardein Chick’n Scallopini on a bed of arugula, brown rice, and broccoli topped with a White Bean Lemon-Pepper-Basil Sauce and fresh parsley
🌱 Make the rice with veggie broth, dried basil, and sautéed onions and garlic for extra flavor. When it’s almost tender, mix in about 4 cups of chopped broccoli and cover again until serving.
🔥 Lemon Sauce:
- (2) 15oz cans of white beans, rinsed and drained
- juice of one lemon, zest of half
- 1 tsp dried basil
- 1/2 tsp black pepper
- 1/4 tsp salt
🌱 Blend in a food processor or blender. Transfer to a small pot and heat over low, stirring frequently until heated throughout.
🌱 Serve in a deep dish with arugula in the bottom, followed by the rice and broccoli, chick’n, and heavily drizzled sauce. Sprinkle on some parsley and 🍻 Enjoy with an @abitabeer Amber Ale 🍻
🍴To avoid frozen/processed foods, but to still get some extra protein: just add another can of whole white beans to the rice and broccoli mixture instead of topping with chick’n.
