Here is another delicious dessert I made for my birthday with a raspberry jam surprise as filling.
-1/4 cup raspberries
-1/8 tsp cinnamon
-1 1/2 tsp agave
-1 tbsp chia seeds
-1 cup macadamias
-2 figs, soaked for 15'
-zest of 1 lemon
-1/4 cup (water with lemon juice)
-1 1/2 tbsp agave
-2 tbsp coconut oil
-1 cup cashews, soaked overnight; add 1/4 cup more if you would like to decorate the final product.
-3/4 cup blueberries, I used frozen -2 tbsp agave
-2 tbsp coconut oil.
1. For thr jam, blend raspberries-cinnamon-agave until desired texture then add and mix by hand chia seeds. Let rest until you work on the rest. Preferably you can make this the day before.
2. For the crust, process the macadamias until you have big(ish) pieces of them then add all the ingredients but coconut oil blend until it is a cohesive/sticky crust, then stream the coconut oil for a couple of seconds, place each crust in each mold and place it in the fridge for 40' or the freezer for 20'; be careful to not over-process.
3. for the filling, blend all the ingredients but coconut oil, once you have a very smooth filling stream in the coconut oil and and fill each mold with it.
4. let rest/set in the freezer for ~2hrs or preferable overnight, decorate and share 🤗
