I used to absolutely adore my dad's toad in the hole as a kid. It was probably the ultimate comfort food. Sausages, Yorkshire pudding & an onion gravy. However, as I grew up I noticed how easy it was to bastardise. I would most likely be at a pub and I'd be presented with a half baked pudding w a couple of anaemic sausages poking out w a thin gruel for a gravy. The sausages poking out the pudding would look like me when I attempt a handstand in the sea. Yeah, literally just like when I would plunge under the water, dip down & try to propel my legs up in the air. But instead, my trunks would fall off & all the onlookers would get to see the place where the sun literally hadn't shined, bobbing along with the waves. This is a slight twist on that classic. Chorizo sausages. Gruyere pudding. Caramelised leeks & shallots. Gravy. Chutney. Not the best pic but incredible flavour 🤘🏽.
