In designing El Pandillo, Felipe honored tradition by using stone ovens, but as with many steps, innovated in the process.
Instead of only steaming and cooking the agave from one side, Felipe designed ovens that cooked from both top and bottom.
Why does it matter?
Because cooking from only one side cooks unevenly, creating more char and bitterness.
