Part 2 // switching over to all organic doesn't come without cost, literally. The cost of organic flour can be over 200% more than conventional, quality branded flour and the cost difference increases even more when compared to generic, Big Food branded flours. Crunching numbers has been half of the work this winter: do I have to increase prices? Will people pay more for organic? Can I find other ways to cut costs to balance out the numbers? And I'm finding out that one of my core values when I first started this business is bubbling up to the surface and reminding me of my true north: making healthy, wholesome, quality breads AFFORDABLE. I don't understand some of the elitism around food. I don't want to participate in the notions that healthy food is only for those with 💱💱💱. last year i lowered my prices. This year I'm keeping them there, even though my costs are increasing considerably. There are many reasons why I stay small, why I don't have a brick-and-mortar; and being able to absorb the increased costs of going organic is as good of a reason as any.
