Finally had the time to edit the pictures i took yesterday and they are a dream!! Just my type of salad😍
This is a Broccoli and Kale salad mixed with Nuts and Seeds. This is probably my all time favourite Green Salad <3
1 handful of broccoli florets
1 handful of washed sliced kale
1 tsp olive oil
2 tbsp almonds (cut into small pieces)
1 tbsp of hemp seeds
2 tbsp of pumpkin seeds
1 tbsp coconut oil
1 tbsp maple syrup
a few pieces of desiccated coconut flakes
pinch of salt
Preheat the oven to 175 degrees celsius.
Cut broccoli into small florets and wash well together with sliced kale.
Drizzle olive oil over the mix and a pinch of salt mixing well using your hands to ensure the oil to spread well over the greens.
Add mix in a baking tray and bring to oven for 6-12 minutes depending on how crispy you like your kale. You can leave in for up to 15 minutes if the fan mode is on.
Remove from oven and allow to cool.
Meanwhile start with the nut and seeds mixture by bringing all ingredients to a frying pan and frying for about 4 minutes in a low temperature stirring well continuously.
Remove mixture from heat and pour over the greens mixture mixing well and top with coconut flakes and voila! xoxo,
