Preparing myself for the weekend by having this healthy and colorful salad for lunch. On my trip to Turkey, I really explored their traditional food and one thing I noticed was how creatively they use coscous in their dishes, be it salad , soup or main course.
Couscous is a wheat product that is very popular in Middle Eastern cuisine. It can be used as a fluffy grain alternative to rice. I used the vegetables available in my fridge and created this Grilled Veggie Coscous salad. It makes a great, satisfying yet healthy lunch filler.
To make it :Place the couscous in a large bowl and pour over boiling water. Cover it until the couscous has absorbed the water. Fluff up the grains with a fork. Heat a griddle pan until hot.Take 1tbsp olive oil in a pan and saute finely chopped garlic for a min over medium heat . Next is to add dry spices , salt and mix fluffed coscous into it. Keep this garlic flavored coscous aside . Place the vaggies in a large bowl and toss with 1 tablespoons of the olive oil until all the vegetables are coated. Place the vegetables on the heated griddle pan, a few at a time, and griddle for 2 minutes each side, until charred and softened. Stir the griddled vegetables into the couscous along with lemon juiceand pine nuts .Fold in the avocado cubes and coriander and season well.
