Roughly a saison base using all Ontario grown grain from @barnowlmalt and Michigan grown Chinook hops.
This beer cooled overnight in our coolship to be inoculated with the wild yeast and bacteria native to St Jacobs, Ontario. It will also have some pitched microbes from Speciations house culture. While in the coolship we also steeped a couple bags of Niagara grown Grape Skins for added colour, and complexity.
This will ferment in French oak barrels that previously held Red wine from a Niagara producer.

Today we brewed our last batch of spontaneous beer for the season. Clocking in at 9 hours and 48 minutes we set a new record for our fastest completed spontaneous brew from start to finish!
