The magic you can weave with a few humble ingredients is simply amazing. Not pictured is the bread dough I prepared last night before I went to bed (I used the recipe on the side of @bobsredmill bread flour packet). I didn’t have any cheese on hand so I went down the mini focaccia route. Lots of good quality EVOO, fresh herbs and garlic.
The star for me was the bread topped with sardines, olives, chilli and garlic. We ate it with a squeeze of lemon and fresh rocket. It was perfection.
The tomato, basil and olive focaccia was very good too. I have saved one for us to eat tomorrow with an omelette ✌️
