I lunched with some ladies this week. It was a “bring a salad to share” soirée. Whew! This Weight Watchers points counting gal can get into some trouble in pot luck type situations. Salads are a bit safer! I whipped this one up for 3 points a serving and used both lemon and dill oils for a little extra somethin’ somethin’. .

Cucumber Couscous Salad with Lemon and Dill
.
2 C. (uncooked) pearl couscous
1 large cucumber, chopped
1/4 C. Red onion
1 Red bell pepper, chopped
2 oz feta cheese
.

Lemon and Dill Vinaigrette
1 Tbsp. EVOO
2 tsp. Red wine vinegar
Juice of one lemon
1 Tbsp dill (preferably fresh)
Salt and pepper to taste
3 drops lemon oil
2 drops dill oil
.
.
**Tip: If you don’t have lemons or any dill herb around, you can always just increase the drops of oils by 1-2 (a little goes a LONG way with these powerful oils) and increase the EVOO and the red wine vinegar. It’s silly but I like the way the dill herb LOOKS in the salad 🙄 and the lemon juice adds some liquid to really help to coat the whole thing. Neither are necessary for taste and the benefits of using the oils are MUCH greater!

Directions
.
🥒 Cook couscous according to package directions and cool completely.
🥒 Mix ingredients for the vinaigrette and set aside.
🥒 Chop cucumber, red onion, and red bell pepper
🥒 Combine chopped veggies with cooled couscous. Mix in the feta cheese.
🥒 Toss with vinaigrette.
🥒 If you live in the south and you’re attending a soirée, put it in your best bowl (bonus points if it belonged to a grandmother or great-mother) and serve chilled. (If you live elsewhere or if you’re eating at home, don’t forget the lid to your Tupperware.)

There are so many variations to this. I have added some chicken for a heartier meal. I have added kalamata olives. Tomatoes are yummy in this. You could even use a different kind of couscous or substitute for quinoa.

Spicy Quinoa Salad
.
Bright, colorful, light, and citrusy, this is a perfect salad to make in the summertime.
.
Ingredients
1 cup uncooked quinoa
2 cups water
½ teaspoon salt
2 medium tomatoes, seeded and cut into chunks
1 red onion, diced
3 tablespoon olive oil
1 (15-ounce) can black beans, drained and rinsed
1–2 drops Lime oil
2 tablespoons lime juice
1 drop Cilantro oil, or to taste
1 jalapeño pepper, seeded and finely chopped
5 ounces queso fresco or fresh mozzarella
Salt and pepper to taste

Note: You can add 1 cup of cooked chicken for extra protein
.
Instructions
1. Cook the quinoa in salt water.
2. While the quinoa is cooking, dice tomatoes, peppers, and red onion.
3. Mix the black beans, tomatoes, red onion, cheese, jalapeño, essential oils, lime juice, salt, pepper, and olive oil in large bowl.
4. When the quinoa has cooled, mix into the bean mixture.

Tip: Mix in a little bit of balsamic vinegar for extra flavor.

6. Take your Bolognese to the next level with a drop of Oregano and a drop of Basil.

7. Tea Party! Add a drop of Bergamot to black tea, and you've got yourself an Early Grey!
.
8. Citrus oils in general, they belong everywhere. Add a drop to your water, your desserts, your smoothies, your stir-fries. Anywhere and everywhere.
.
9. Mix some olive oil, ACV, Lemon essential oil and some salt and pepper, and voila! Easy vinaigrette to toss through your salad.
.
10. Use the toothpick trick next time your wanting to spice up a warm drink. Dip the end of a toothpick in the bottle of your fave oil (try ginger, cardamom, cinnamon) and then stir it through. This will give you less than a drop and be enough to give you an incredible flavour without overpowering!
.

I currently have 25 pounds of peaches from a local orchard in my home! What can I say? I really love peaches 🍑. So last night I made French toast with a few drops of orange essential oil in the batter, and topped it with homemade peach syrup with a few drops of lemon eo. Who needs an herb garden when you have essential oils on hand? 🌿 Dill, fennel, coriander, thyme, mints, rosemary, oregano, basil, & cilantro...you can substitute all of these in your recipes & so very little goes a long way. Do you cook with your herb EOs? What’s your favorite?

I’ll be honest oregano, I forget about you and you wait patiently holding the shelf down.

At least till the next time I encounter those occasional, strong seasonal threats. Or a lot of people in an airplane. Then I remember your immune-boosting goodness. I may smell like a delicious, mouth-watering pasta but I can live with that.

Or till I’m out of my dried oregano herb then I remember you’re a good cooking buddy. Happy to assist with the meal. Use the toothpick swirl method (carefully insert a toothpick in, I’m lazy - in a hurry - and don’t take off the orifice stopper, and then gently swirl into your recipe-in-progress). Or if I’m making a double or triple batch of lasagna or spaghetti sauce then I’ll put one, maybe two drops, into the minced garlic/oil (the oils bind and incorporate better).
