I found this book at a shop in Fall River looking very out-of-place amongst several commercial cookbooks. I was lucky I did, for a quick glance at the spine revealed it was authored by none other than Dominique Ansel, former pastry chef of Daniel Boulud and worldwide pastry extraordinaire. Opening to a random page, I saw an image of a cinnamon marshmallow in a chocolate shell shaped like an apple and knew I had to have it.
This is an image of the recipe for his ricotta cheesecakes and my favorite entry in the book for the simple reason that I love cheesecake and his does not disappoint. There are many incredible recipes of varying levels of difficulty and while this is classified mearly as "intermediate", it is as wonderful and exciting as any of the others.
I would not consider myself very talented in the ways of pastry artistry but Chef Ansel's book makes me want to be. The first half of the book is prose, detailing each of the inspirations behind the latter's recipes. Categorizing them based on skill level was a good call and allows any reader to be able to use this book effectively. In this manner, it's perfect for both the amateur and the professional pastry chef.
I ran across this cookbook in a thrift store a couple of years ago. The subject matter and silver seal indicative of a James Beard award got the better of me and I gave it a quick run through. I learned that it was both a reference book and a cookbook focusing on exotic, rare, or otherwise unusual ingredients. I loved the idea and decided to take it home.
While the recipes are great and offer many clever ideas, the beauty of this book is in the ingredient sections interspersed throughout. Within, you can find general information on items from alligator pears to zathar: historical, geographical, and practical.
This is a great read for the more adventurous cook and handy to have in a home with access to more exotic groceries. Gourmet Ingredients features roughly 250 entries. They are categorized in an accessible manner and, as a whole, is very easy on the eyes.
I bought this cookbook because I was intrigued by how honest the food is presented, both in procedure and in recipe. That it pertained exclusively to roasting, grilling, and braising made it seem all the more special. The photos were gorgeous and I would buy every plate featured in this book if my apartment wasn't currently filled to the brim with cookbooks.
