Out east in Turkey, we loved hanging out in firin (wood-fired bread bakeries) and watching each baker put his own mark on his Fingerprint Flatbreads (recipe in the Van/Hakkari chapter). One baker in Siverek, a town in Sanliurfa province, took the prize with these beautifully scored and decorated (nigella and sesame seeds) pide. Not just for a special occasion, either: he turned out a huge variety of intricate designs every single day on each of our three visits to the city. (If you scroll down in my feed you'll see a pide with a heart scored into its surface -- his work. And yes -- the bread is delicious!) I'd love to return to Siverek and master the craft of pide art.
