One of the biggest environmental damages being done is livestock agriculture. 💔 Natural landscapes are being removed/polluted in order to create land to bring animals into the world only to be turned into products. Slowly our natural world will dissipate, with it native wildlife, resources, and water. It is proven we do not need to eat animals to be strong and healthy. 💚 💪🏼 Why not save those animals, the environment, water resources, and other native species to create a more sustainable present and future? 💙🌎🥀 #veganism

Cauliflower steaks! That’s right, vegetarians eat steaks too. These ones are SO easy to make, and when roasted the cauliflower crisps up so nicely you might find yourself downing a whole head for dinner. The glutasinolates in this cruciferous are sooooo important, and are well researched for their cancer protective effects. Many people don’t get enough of this important phytonutrient. I always suggest trying to have one serve of cauliflower, broccoli, kale or Brussel spouts each day. 🥦
What to make cauliflower steaks?
Remove the leaves but not stem, slice lengthwise in 1/2” slices and drizzle with olive oil and season. Bake in a preheated oven at 400F for 10 minutes, then flip over and bake for another 10 minutes. 🍋
Serve it with a creamy Tahini sauce.... Recipe: 🔽
✔️1/4 cup @newworldfoods Tahini
✔️1/2 cup fresh lemon juice
✔️2 tbsp organic tamari or soy sauce ✔️2 tbsp extra virgin olive oil
✔️4 tbsp water ✔️Garlic (optional)

Black bean hummus with grilled tomatoes, walnuts & basil 🌿 I’m massively into black beans at the moment. They have a lovely rich consistency and are packed with vitamins and minerals, high in protein & fibre and contain disease fighting antioxidants 💪🏼 I love them in a chilli con carne and you can even make delicious chocolate brownies with them 😋

My staple breakfast… Oatmeal 😊 I buy the unsweetened packs from Trader Joes. It’s made with chia seed, flax seed, quinoa and amaranth. I was inspired to make homemade grain free granola from @minimalistbaker I find it more of a treat than anything. It goes well with yogurt (DF) in salads or by itself. I find a great alternative especially when you’re craving sugar. 😅

Almonds, pecans, walnuts, sunflower seeds, chia seeds, flax seeds, unsweetened coconut shreds. Take all nuts chop them into smaller pieces put them into a bowl, stir together with the chia, flax seed and coconut shreds and set aside. You can really be creative with this recipe and give or take what nuts and seeds you love. ❤️

On low heat melt coconut oil, add maple syrup and agave, stir until it becomes melted. Add this to the bowl of nuts and mix thoroughly so it soaks up the nuts and seeds. Pour the granola onto a large cookie sheet, spread the granola evenly so it bakes well. Bake for 20 minutes. The granola can easily burn so check it periodically. .

Well it’s been about a month on my intermittent fasting programme (some may call it diet!!). For me the word ‘diet’ just has all these negative connotations associated with it. During this time I’ve never felt like I’m either depriving myself of anything or am hungry in between, and still having some carbs! A lot of eating can just be a learned response and we eat three times a day with snacks similar to the way we were as toddlers. However our needs and demands do change and particularly those with autoimmune disorders need to make adaptations. Best way is trial and error and making little changes but sustainable ones. There’s no doubt I’m feeling less fatigued, mind is sharper with reduced episodes of brain fog and gut is defo happier 😃. I’ve noticed less bloating and hardly hear the strange gurgly noises that I’d emit (promise it wasn’t wind 😂😂). Today I was hungrier when breaking my fast so I had my smoothie followed with some summery light bites. Seeded sourdough with beef, mustard, spinach, rocket, lambs lettuce, micro salad, cucumber, red onion and vine tomatoes. Dressing was a little fresh lemon with olive oil and pepper.
