In need of a nice fall salad for thanksgiving? I came across this delicious combo at @true_food_kitchen and thought, โ€œwhat a great idea for the holiday season!!โ€

It was filled with shredded Brussels sprouts, roasted ribbon butternut squash, pomegranate, mulberries, feta cheese (which I took off to make it #vegan) and a horseradish vinaigrette ๐Ÿ˜‹ I topped mine with some herbed tofu but Iโ€™m thinking about swapping the tofu for some toasted almonds next time to make a great side addition to our thanksgiving meal!

Taste of Tuesday: kids in the kitchen! After a call from the school this morning I picked my 10 year old up early - puking in class is frowned upon. He rested his little tummy for hours and then decided he was hungry. I encouraged him to start with some bone broth and see how that settled. Soon after, he decided he was ready for more and I caught him putting together this little salad from @theforestfeast for kids cookbook. Although the only ingredients we had on hand were cucumbers, almonds and olive oil, he completely improvised on his own by swapping snow peas, goat cheese and strawberries for peppers, turnips and apples. Slicing, dicing and ribbon-ING away - independently and confidently.

Hopefully it all stays down - I think it might have been something he ate (quick, no fever). Regardless, letting your kids in the kitchen at a young age to do a little experimenting can certainly pay off sooner than you think!

S T U F F E D P E P P E R S. I made these for dinner last night and made sure to have extra for my lunch or dinner over the next few days. hereโ€™s the recipe!! โ€ขground turkey โ€ข4 peppers, halved
โ€ข3/4C salsa
โ€ขchili powder, ground cumin, onion powder, garlic powder, cayenne pepper
โ€ขlike a pan with foil, leaving extra to fold over the top โ€ขbrown turkey with seasonings
โ€ขadd salsa
โ€ขfill peppers with turkey salsa mixture
โ€ขbake @ 375 ~35 min
โ€ขadd shredded cheese +5min
โ€ขmake sure you line and cover pan with foil!

Completed #day4 of #21dayfix with #pilates and I LOVED Pilates lol, I had never done them before and it seriously had me lookin into what the certification process was like and etc info about it, ha! Today was easier to get it done because my husband was home to help with the kiddos today, yay! Side note, my preworkout lasted for a postworkout speed clean of the house and some laundry, ha. Double win. No but on a serious note, working out is clearing my mind, I'm much more focused and a lot more positive and energetic. I'm waking up earlier without hitting snooze and all I'm doing is eating healthy and working out. I'm not bashing anything that is out there by any means. I've never tried any programs so I am not in a position to have an opposing opinion of anything. I'm just saying it as some encouraging words to anyone that might need it,...working out and getting your body healthy does A LOT for a person's health of the mind as well. BYE BYE Stress!
