In need of a nice fall salad for thanksgiving? I came across this delicious combo at @true_food_kitchen and thought, “what a great idea for the holiday season!!”
It was filled with shredded Brussels sprouts, roasted ribbon butternut squash, pomegranate, mulberries, feta cheese (which I took off to make it #vegan) and a horseradish vinaigrette 😋 I topped mine with some herbed tofu but I’m thinking about swapping the tofu for some toasted almonds next time to make a great side addition to our thanksgiving meal!
My favorite thing about eating seasonal ingredients is knowing the nutrient content is through the roof. Delicious and beneficial ~ love me some veggies!
