(Recipe and macro 👇) While my feed may seem to indicate the I eat sandwiches 24/7 I assure you that I only eat them 12/7 😛 bad jokes aside, typically my lunches are eaten at work and I like to include a TON of veggies, some sort of fat (either in the form of nuts and sautéed veggies and nut butter!) some protein, and CARBS (either quinoa or rice!)😋. This bowl in particular was super easy to put together (and if you precook your quinoa, then it takes maybe 5 mins to toss together!). .
1/4 c dry quinoa (3/4-1 c cooked)
2 c frozen veggies
1 tsp coconut oil
1/3 small avocado
1/2 c black beans
Lemon and dukes flakes to top
Sautee your veggies in some water and coconut oil over medium heat until fully heated through. Add everything to a bowl and your favorite sauces (some nooch and sriracha May have been added later 😉) .
