Cold Infused Tea: a refreshingly fragrant chilled tea for hot Summer days! In a recent visit to my favourite Tea House in Paris, Thés de Chine at 20 boulevard Saint Germain, #thesdechine, its owner Vivien Messavant recommended me to try a cold infused tea using an Anxi Tieguanyin (安溪铁观音) Grand Cru.
Preparation is simple: 2 teaspoons of dry tea leaves infused in a 1.5L bottle of mineral water. The bottle should be kept overnight in a refrigerator.
The cold infusion results in fewer tannins and a more delicate taste. In the case of Anxi Tieguanyin, a 10% oxidised wulong tea, the cold infusion releases a beautiful jade green colour, floral notes (white flowers, orchids…) and a sweet aftertaste.
Our take on this Vietnamese dish : bun ga nuong or the grilled chicken noodles salad. Excellent for a hot day! Instead of the traditional lemongrass chicken, we did a ginger garlic chicken. It is topped with fresh veggies and do chua (pickled daikon and carrots), then we drizzle some nuoc cham aka the Vietnamese dipping sauce. Au lieu de faire le traditionnel poulet à la citronnelle, nous avons opté pour un poulet aux gingembre et ail. Le tout accompagné de légumes frais et de do chua (daikon et carottes marinés). On termine le tout avec la sauce vietnamienne typique: le nuoc cham. On a juste oublié de se faire des rouleaux impériaux! 🤷
Bordeaux Clairet is a regional appellation, a wine between red and rosé made from merlot, cabernet sauvignon and cabernet franc. Its maceration process is longer than rosé, lasting around 48 hours, resulting in a fresh, deep coloured wine with very fragrant aromas, fruity and floral flavours (strawberry, blackcurrant, rose…), moderate tannins and a medium body.
Bordeaux Clairet should be enjoyed chilled whilst still young. It is the ideal wine to pair well seasoned Chinese Summer dishes that are eaten cold like cold noodles, bang bang chicken or pickled cabbage.

Cold cut chicken in spicy chilli oil and sesame and garlicky cucumber salad. So very refreshing, particularly with a very nice glass of resieling that @nat_stockley brought and didn't even get charged corkage for ('was it because there was no cork?', we pondered).
