Thanks @mikkelfriisholm for enlightening us! Cacao fermentation cannot always be based solely on color. You can get awesome flavor development, and still have color imperfections at the cut test. The result? If it’s good when you try it for flavour, AWESOME chocolate (hence why this bar states “bad fermentation”). #PDGCacao
