This gentleman has a nice story. His father bought that espresso machine around 70 years ago, it was one among many that came directly from Italy. He also started that café, located in a corner of Salento’s main plaza. Currently, he uses local coffee beans from the region (Quindio, Colombia) which are also highly roasted. And as you can see, it’s far from being specialty coffee. In that photo he is heating up an “americano” to boiling temperatures that regular clients prefer. He’s worked in that café his entire life and doesn’t have any plans to stop soon. Obviously, the old espresso machine brings in many clients that want to see it in action and listen to its history. From this café you don’t get fancy cappuccinos or latte art with swans, you get the classical Colombian “Tinto”, a drink that’s rich with notes of culture and centuries of heritage!
