Minty Coconut Lassi:
I cannot think of a better way to welcome the sultry New England summer than with this cool and creamy Coconut Milk Lassi. I was introduced to the Bengali coconut lassi (Daaber Ghol) by my friend from Calculta. The traditional version is made with fresh tender coconut meat and coconut water and tastes DIVINE! My version, however, includes ingredients that are available locally. The coconut meat has been (promptly) replaced with thick coconut milk 😊 “When in Rome, innovate!” Haha!
Make it thick, make it thin, make it sweet, make it savory; make it just the way you like it. I personally like the savory version of this velvety beverage, made thick and topped with ice cubes. #yum #summersolstice #happysummersolstice !
