Fine drinking in Tel Aviv: French 57 (2/2)
Oron actually got his start through writing a cocktail blog in Hebrew: Al Habar Halomot Retuvim (‘At The Bar – Wet Dreams’). “I always liked drinking”, he now says. “and I liked making drinks for my friends and colleagues. But as there were no books at that time to take inspiration from, I started my own recipy collection, and published it online. Sooner or later you start experimenting with things that take more than just a couple of minutes. I got to barrel-aging first, because guys like @tonyconigliaro and @jeffmorgen were writing and talking about them. Anyway, in time, the blog became the largest collection of cocktail-related writings in Hebrew.”
Oron helped out for the first year of @imperialcocktailbar; then he started his own place. For French 57, he and his team take cues from New Orleans’ storied cocktail culture.
“New Orleans and Tel Aviv have a lot in common, which is easy to see”, Oron said. “The Tel Avivvy Mediterranean style of hospitality matches really well with the New Orleans-style of Southern hospitality. So many NOLA drinks suit the Israeli palate. And then we started looking at the food, and that was amazing too. Spicy, rich – it’s not about healthy eating. It’s about eating, you know. If you combine that with the local products, then it comes out amazingly good. Our kitchen offers cajun, creole, soulfood, a lot of modern combinations... We try to give a taste of everything.”
