Recipe for the chicken curry with veggies. Please ignore my messy pan, took the pucture right after cooking. You can incorporate any veggies you like. I used the minimal I had at home.
Ingredients-One large red bell pepper, one large green pepper, 3 large carrots, 2-3 scotch bonnet peppers, garlic, ginger black pepper, white pepper, vegetable oil, cornflour or cornstarch, one large onion, 500g of chicken, curry, thyme, oregano, salt, seasoning cube, rosemary.
Procedure- Season chicken with salt, seasoning cube, curry, thyme, oregano, rosemary and onion. Steam with little water for 5 minutes, stand by to ensure it doesn't burn. When water is almost dried, add enough water to boil the chicken and leave to boil. Once chicken is boiled, remove and set aside. Set aside the chicken stock also.
Chop the carrots, bell peppers, scotch bonnet, ginger and garlic. In a skillet, heat about a tablespoon of vegetable oil, add the carrots and stir fry for about a minute. Then add the bell peppers, ginger and garlic, stir fry for another minute. Add the chopped scotch bonnet and stir fry.
To the chicken stock set aside, add one heaped tablespoon of cornflour or cornstarch. Mix until there are no lumps left.
Pour this mixture into the skillet and turn properly. Add white pepper,black pepper,curry, a cup of water and chicken. Leave to simmer for a couple of minutes and take off heat. Simple and quick👌
