Monday morning, we meet again.. ☕️
Kept things simple this morning with some overnight oats topped with fresh berries, peanut butter, chopped almonds, and LOTS of almond milk post-picture 💯 Legit one of the easiest and quickest breakfasts out there! Recipe below👇🏼
Overnight oats 🥣
• 1/2 cup oats
• 1/2 cup almond milk
• 1 tbsp @manitobaharvest hemp seeds
• 1 tbsp chia seeds
• 1 tbsp @crazyrichardspb peanut powder
• Dash of vanilla extract
• Pinch of salt
🌙 The night before.. Stir together all of the ingredients, cover and refrigerate overnight.
☀️ In the morning.. Give it another stir, add more almond milk (if desired) and top with whatever fruit, nuts, etc. that you’d like!

I’ve come to the conclusion that whoever came up with the expression “less is more” clearly never had peanut butter.. 😆

Hear that? 🔊This 5-Ingredient Chocolate Peanut Butter Fudge is calling your name! 🍫🥜 I was craving something chocolatey and this totally did the trick 🤸🏼‍♀️ The fudge is sweet and salty – a dessert combo I can’t get enough of lately 😝 Tomorrow we are heading to Georgia to visit my Grandma. How to 👉🏼 In a saucepan over low heat, melt 1/4 cup coconut oil.
Whisk in:
1/3 cup @crazyrichardspb crunchy PB
1/4 cup @betterbodyfoods cacao powder
2 TB maple syrup
1/2 tsp salt (use less salt if your PB is salted)
Whisk until mixture is smooth and combined. Pour into 6 squares of a silicone ice cube tray. For topping, in the microwave melt 1 TB peanut butter with 1 tsp coconut oil. Top each square with melty PB. Swirl with a toothpick. Refrigerate for 2 hours. Store in fridge or freezer. DEVOUR 🤤

I'm always looking for more ways to add more plant 🌱 foods into my everyday, and will be sharing some of favorites with what I'm referring to as the #OneMorePlant movement! ☝🏻🌿
Smoothie bowls are one of my favorite ways to sneak more veggies in without even knowing it, such as this morning's creation 👇🏻
▪️1 cup unsweetened vanilla @almondbreeze (my go-to milk bevy for smoothie bowls and lattes!)
▪️1/2 cup frozen @wymansfruit wild blueberries (frozen fruit is key, and the wild bloobs are LOADED with antioxidants)
▪️1/2 cup frozen cauliflower (makes it creamy AND adds veggies!) and a handful of baby spinach ( you wouldn't know if I didn't tell you 😉)
▪️1 scoop @amazinggrass vanilla protein powder (my favorite plant-based protein powder that's fulla greens!)
▪️topped with a 🍌 flower (because why leave that beauty to only 🥑?!), toasted coconut, chia seeds, pumpkin seeds, and a good drizz of @crazyrichardspb .

I’ve loved to bake as long as I can remember and in the past I’ve just put that on hold when I was trying to eat healthier. But this time around I’ve tried to incorporate my love into my healthier lifestyle with just healthier recipes. Right now that means more paleo treats made with ingredients like nut butters, coconut sugar, and almond or coconut flour and less refined sugar and all purpose flour. That’s not to say it’s just a paleo-treat-apolooza over here, it’s still a balancing act to get all the greens and healthiness in every day so I can feel good indulging once and awhile. Balance, people, balance. This was my foray this week, @fitmittenkitchen paleo banana chocolate chip skillet cake. So good with a really moist crumb and lots of loft! Best served warmed with a melty drizzle of @crazyrichardspb. You won’t be sorry.

Good morning!! It’s only Tuesday but I’m already ready for the weekend and slow mornings where I can enjoy a delicious breakfast that I can make without having to run out the door.
