Made a quick 30-minute Pho with shiitake, micro pea greens, a hard-boiled egg, and rice noodles๐Ÿœyum!

Blueberry Banana Protein Waffles with raspberry compote

Only 358Cal for all 4 waffles! Fat 8.5g, carbs 43g, protein 30g

Recipe Serves 1-makes 4 small waffles
1/4 cup oat flour (30g)
1/2 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon cinnamon
1/2 scoop (17g) @genuinehealth #vegan berry protein powder
1 egg
2 egg whites
1/4 cup mashed banana (60g)
2 tablespoons almond milk
1/3 cup blueberries (40g)

1. Combine flour baking soda, baking flour, cinnamon and protein powder.
2. Whisk egg whites until frothy. Combine with mashed banana, egg, and almond milk. Fold in blueberries.
3.Heat a waffle iron and brush with oil to prevent sticking.
4. Scoop 1/4 cup of batter for each waffle. Cook accordingly.
5. Mean while heat 1 cup of raspberries with 2 tbsp. water and 1/2 teaspoon powdered stevia. Mash and add 1 teaspoon thickener (I used arrowroot powder) mixed with 3 tablespoons cold water. Boil then remove from heat, it should thicken up.

Today marks the last day of 2017 as we usher in 2018.
This is the final sugar free dessert I have baked. 2017 is an awesome year where I got to really improve on my baking techniques and had really got to experiment a lot after.
For the rest of you, had your resolutions been accomplished or are they gonna be repeated in 2018. ๐Ÿ” We only have one life to live and thereโ€™s no restart button on this game of life.

Letโ€™s not waste our lives away but make every moment count. 2018 is a new 365 days that we can make some differences to ourselves and to others around us. ๐Ÿ˜‰

Made a Christmas Croquembouche for the celebration gathering. Each of the Muscle puffs are filled with Durian purรฉe with protein cream ๐Ÿคค I added a puff with the shape of the star and covered it with gold leaves ๐ŸŒŸ

I love baking my protein cake creations for my friends and especially when itโ€™s meant for happy celebration like Birthdays ๐ŸŽ‚
