For those that don’t know, I have an Autoimmune disease that causes pain, inflammation, and cysts in tendons as well as tendon and muscle tightness. WELL...I haven’t been able to wear rings forever. I have today off of work, so I decided to take care of my grocery shopping instead of waiting until tomorrow morning. Problem is, I went to the gym first, and by the time I got to the store it was after 11. There were so many people it was crazy. I had no idea! I’ll stick to early morning on the weekends going forward for sure. Had a decent grocery haul, though, and I of course picked up more of that amazing Edy’s slow churned pumpkin pie ice cream.

So the last 5 days have been so busy, but I managed to force myself to workout. I’ve been on a very strict 1000 calorie, low carb natural diet with only yoghurts, fresh fruits, vegetables and meats. Strictly no alcohol, only allowed water and tea to drink outside of my smoothies. I have noticed a huge difference in my skin and my hair almost immediately. My endurance has improved as i’m not as bloated for my afternoon workouts. I’ve also noticed I don’t eat as much or get as hungry as often. I also no longer have cheat days. I have one cheat meal a week. It’s surprisingly not that bad to get used to 😊 even with a huge pick up in activities in my life too. Have you tried baking with Coconut flour yet? Its lower in carbs then regular flour and it packs some serious fiber👊

The awesome part about coconut flour is that you don’t need to use as much. This recipe only calls for 1/2 cup. This recipe is also paleo and gluten free friendly . If using regular dark chocolate chips ... it will not be.

▶️INGREDIENTS
1/4 cup melted coconut oil
1/3 cup honey or maple syrup
2 teaspoons vanilla extract
2 eggs, slightly beaten
¼ cup unsweetened almond milk
1/2 cup coconut flour
½ teaspoon baking soda
¼ teaspoon salt
3 oz your favorite dairy free dark chocolate bar, coarsely chopped
1/2 cup unsweetened coconut flakes, optional ▶️INSTRUCTIONS
-Preheat oven to 350 degrees F. -Spray 8x8 inch baking pan with nonstick cooking spray -In a large bowl, whisk together coconut oil, honey, vanilla, eggs, and almond milk. -In a separate medium bowl whisk together coconut flour, baking soda, and salt. -Add dry ingredients to wet ingredients and mix until just combined and batter is smooth. -Fold in chopped chocolate, reserved a few tablespoons for sprinkling on top if desired. -Bake for 20-25 minutes or until edges are golden brown and knife comes out with a few crumbs attached. -The batter may look like it's not all the way cooked but it will be. -DO NOT OVERBAKE -Cool bars on a wire rack for at least 10 minutes so that they settle a bit, then cut into 16 squares.

Soooo post-otf all I wanted was a big juicy steak and some mashed potatoes and gravy! But I stayed on track and had champagne and herb salmon and mashed cauliflower instead! Changing my diet to fit in more veggies and good fats is going to be the hardest part of getting back into shape, but I’m gradually getting there!

Just call me mother effing Martha Stewart, y’all!! I threw together this AMAZING dinner on the fly and it was super easy and I have about 3 more meals I can make with the leftovers. I made an artichoke, tomato, and goat cheese chicken bake with acorn squash. For the chicken bake I mixed together canned drained artichoke hearts that I cut into smaller pieces, garlic salt, goat cheese, and chopped tomatoes and spooned the mixture on top of thin cut chicken breasts. I tucked some parchment paper over and around the chicken and baked it at 350F for 40 minutes. The parchment paper keeps the chicken so juicy! For the acorn squash, I rinsed it and popped it in the microwave for 3 minutes, let it cool, cut it length-wise, scooped out the guts with a grapefruit spoon, and cooked it in my Instant Pot on the trivet with 1/2 cup of water for 5 minutes HP QR. I threw some fresh butter from a local farm and some cinnamon on top of the squash. Check out those well-balanced macros!
