**RECIPE TIME*** This is one of my favourites...
Tofu Scramble (by Me).
300g organic firm tofu – drained and crumbled
1 carrot – grated
1 zucchini – grated
1 onion – chopped
1 small garlic clove – crushed
Handful of baby spinach leaves
10 button mushrooms – sliced
¼ red capsicum – chopped finely
1 tomato - diced
¾ tsp turmeric
1/3 tsp curry powder
1 Tbs tamari
4 Tbs sunflower seeds
2 Tbs sultanas
½ sweet potato – diced very small and pan fried with a dash of olive oil until cooked through
Heat a frypan on medium heat, and add 1 Tbs olive oil.
Fry the onion and garlic until soft.
Add carrot, zucchini, sweet potato (pre-cooked), baby spinach, mushrooms, capsicum, tomato, sunflower seeds, tamari and sultanas, stir until veggies are cooked (about 5-6 minutes).
Add tofu and sprinkle with turmeric and curry powder.
Season with salt and pepper.
