Super Quinoa Breakfast Bowl
Ingredients

1 1/2 cups cooked quinoa
1 cup blueberries
1 banana, sliced
1/4 cup sliced almonds
2 tbsp hemp seeds (optional)
1-2 tbsp real maple syrup
1 tsp cinnamon
Instructions

Mix the cooked quinoa with the maple syrup and cinnamon, stir to combine. Heat the quinoa in the microwave or on the stovetop until warm. Divide between two bowls.

Spinach Silver Dollar Pancakes

These gluten- and dairy-free silver dollar pancakes are kid-friendly, easy to make, and seriously delicious. Whip up a double batch for the whole fam and reheat any extras in the toaster oven.

SERVES 2-3
for the pancakes:

1 cup gluten-free pancake mix

1 egg

1 cup fresh spinach leaves

¾ cup unsweetened almond milk or coconut milk

1 banana

½ teaspoon ground cinnamon

coconut oil, for frying

to serve:

maple syrup and fresh blueberries

1. Combine all the pancake ingredients in a blender and blitz until smooth.

2. Heat a nonstick pan over medium-high heat. Add about a tablespoon of coconut oil and add the batter, a heaping tablespoon at a time, to make the silver dollar pancakes.

3. Flip once the air bubbles start to appear on the surface of the pancakes and cook for another minute.

4. Serve with maple syrup and blueberries.
