It was a long day at the lab today. The previous perfect post featuring the perfect choux is the chef’s version.
And this was what I finally made at the end of the day. Pâte à choux with a coffee crème pâtissière filling. Far from perfect, and not even close to average yet; the top is not supposed to crack that much and the crème pâtissière is still too lumpy and the bottom of the pan had a slight burn. Definitely not ideal.
My eclairs were way worse and I really need to work on my piping. But practice, practice, practice! Lots more to learn, but at least it tasted good 😊
Working with choux is new to me, but I’m throughly enjoying the learning process. Our chefs are incredible and it’s amazing to just watch them and take it all in.
Fingers crossed for tomorrow when we make them again and glaze them. 🤞
