Chocolate Chia Pudding with Raspberries
It’s Saturday and the weekend calls for a sweet treat. After a busy week we are gearing up to relax with a snack and curl up on the couch for a family movie. But you CAN have a treat without the guilt or sugar hangover that comes with traditional desserts. And this just hit the spot for me!

Now the recipe:
~ Combine in a bowl: 2.5c of milk substitute (almond, flax, etc), 1/2 c chia seeds, 6 Tbsp unsweetened cocoa powder, 2 Tbsp maple syrup, 2 tsp vanilla extract, 1/4 tsp salt. Whisk until well blended.
~ Let stand at room temp for 30 minutes, then mix well and place in the fridge for 4 hours or overnight. The seeds absorb the milk and become a creamy pudding!
~ top with berries of your choice! I used both raspberries and blackberries and DEVOURED this delicious treat! So.much.yum! In just a few minutes, with NO BAKING. Amazing.
