As much as I love Mexican, I also adore Greek/Turkish/Middle Eastern/Mediterranean foods too. Infact perhaps they are on par... 🤷🏻♀️ Or maybe I just love foooooood. It’s little wonder I became quite robust in our 2013 global travel adventure, because I ate ALLL the food. Everywhere. Every country, ALL the deliciousness.
This meal is again, not quite any specific region, but rather a good mix of all. A fairly easy and colourful dinner for your #fambam.
Lamb mince, with added spices of your choice. I used Garam Masala, Paprika, Cumin, Salt & Pepper, one egg and a lift dusting of breadcrumbs. You will need a fair amount of this to give your Koftas flavour! Roll into little sausage shapes and I baked these about 180 degrees for 25-30 minutes, or so, until cooked through.
‘Purple’ Cous Cous
Add Pomegranate seeds, baby beets, pine nuts and spinach to one cup of cooked Cous cous, a small drizzle of fresh lime or lemon and S&P and you have a colourful, textured perfect #pitastuffer or #sidesalad.
Chopped tomatoes, cucumbers, feta, olives. A little of hummus or tzatziki (whatever you prefer). And Greek Pita Bread. Must be fluffy, cook like you would Naan Bread with a little water under the grill for 2 minutes.
