DIY FALAFELS 👏
Who doesn’t love a good falafel as a snack, in a salad or (spoiler alert Dave) in wraps like our dinner tonight? These middle eastern gems are made from chickpeas and boast some nice health benefits being a great source of vegetarian protein and fiber as well as constraining 7 key vitamin and minerals. They are so easy to make and trust me home made is way better than store bought! Your turn: -2 400g canned chickpeas. (If you’ll use dry chickpeas, you have to soak them overnight)
-2 Tbsps psyllium husks or ground flax seeds
-1 cup fresh parsley, chopped
-1 carrot, grated
-1 onion, diced
-6 garlic cloves, mashed
- 4 Tbsps chickpea flour, or any other type of flour
- 1 tsp sweet paprika
-½ tsp ground cumin
salt and pepper, to taste
-2 Tbsps tahini paste
oil (3-4 Tbsps) for frying

Method:
Add chickpeas in the food processor and blend well until they have a paste-like consistency.
Put them in a large bowl and blend in all the other ingredients, except oil.
Heat some oil in a non-stick frying pan.
Make the patties – 1 Tbsps per patty.
Fry them 2 minutes on each side.
Put the falafels on a plate covered with a paper towel (absorbs all excess oil) YUM!

OVEN ROASTED CHICKPEAS...This is a dangerously addictive #healthy #snack that I can't stop eating. I have fallen in ❤️with them since I have learnt to make them and I am sure each one of you will, once you try these #chickpeas...and you won't believe how simple it is to make.

I garnished my Cauli Lemon Rice(recipe posted yesterday) with these crunchy chickpeas. We have been #snacking on these lovely crunchies with tea for the past two days😝

✨Recipe✨
Ingredients🌱
Chickpeas, canned or soak dry ones overnight and pressure cook for 3-4 whistles with a big pinch of salt
Seasoning of choice...I have used chilli powder, salt, black salt and my fav chaat masala
A teaspoon of oil
Method♨️
🔸Wash the boiled chickpeas by running cold water through it and leave it in the strainer for about 10 minutes.
🔸Gently wipe dry the chickpeas between two clean dish towels as much as possible.
🔸Discard any visible loose skin. You don't have to peel the skin intentionally.
🔸Line a baking try with parchment/foil/silicon mat.
🔸Place chickpeas on the prepared tray with oil, mix to coat well and spread out in a single layer.
🔸Preheat the oven and bake at 400°F for 25 minutes at the center of the oven, shaking the pan a couple of times in-between. 🔸Remove the chickpeas and let it rest at room temperature for 10 minutes.
🔸Pop the tray back in the oven and bake for another 10 minutes. This method helps the chickpeas crisp up without burning them.
🔸Remove chickpeas from the oven, toss them in salt and spices of your choice and let cool. The chickpeas will attain crispness after cooling down completely.
🔸Enjoy them immediately for best results or store in an airtight container for upto two weeks.
🔹Note: Always add the spices after the chickpeas are done and not while baking to prevent the spices from burning and turning bitter.
🔹Top these chickpeas on salads and soups for a lovely crunch.
