Chia seed pudding! Chia seeds contain fiber, protein, healthy fat, antioxidants, and more. Because of the large amount of fiber, chia seeds absorb liquid and swell 10-15 times their weight and become gel-like.
I don't believe in "superfoods," but many foods are loaded with nutrients and chia seeds are a good example. I believe all foods can contribute to a healthy diet in moderation and with a plan.
I like adding chia seeds to my oatmeal or I make this chia pudding to add a boost of nutrients to my day.
1 cup milk (any kind)
3 T chia seeds
1 T protein powder (or any sweetener)
-Mix together and let sit overnight for the chia seeds to gel.
