I keep thinking about this lemon chia pudding! I just got home from a 5 day mini vacation today after visiting my mom and my best friend, and I think it's time to make some more of this wonderful stuff!
Someone asked about the lemon chia pudding, so here is my recipe again-
(This one here is topped with a mango compote I made and the recipe for that can be found a few posts back in my feed) 💛 1 can of light coconut milk (not carton)
💛 3/4 cup milk or dairy alternative 💛 1/2 cup chia seeds
💛 1/4 cup unsweetened coconut flakes
💛 1 tsp agave
💛 1-2 tsp lemon extract
Mix all ingredients and set overnight. (Sometimes after its set overnight if it's too thick I'll add more milk or almond milk if I want it thinner)

In order for a dressing to season a salad properly, it needs a bit of viscosity. That's why chia seeds are the perfect addition to a dressing. [recipe link in profile] @norecipes

Nice'cream twins for the hubby and myself. The nice'cream is made of coconut milk, frozen banana and frozen kiwi. I topped it with slice of fig, blueberry and goji.

Recipe:
First layer: 1 cup of coconut milk and soaked chia seeds 4hours at least before serving

Second layer: 1 cup of frozen banana + one frozen kiwi + 1 tsbp coconut milk

Toppings: slice of figs +blueberries +goji

I'm actually eating my oatmeal while it's still warm for once.🙌🏽 Added a few #GogiBerries and #GoldenBerries, to my usual oatmeal #ChiaSeed mix, for sweet and tart flavors. I'm trying to eliminate adding sugar to anything or eating anything with added sugars (except my occasional cookie days🍪) and I swear, I've never felt better in my life. This is probably the healthiest I've been in years and the only supplements I'm taking is a probiotic and a multivitamin. That's it! Real food, whole foods all day long and my body is thanking me for it!
