One of the most legit French bakery’s I’ve been to is a mellow neighborhood spot in Santa Fe called Clafoutis. The pastry case is stocked, delicious, and if you order there, you’ll likely be greeted by the owner in French. If you are passing through it’s definitely worth your time.

An extra special event tonight at #AppellationChicago - Masters of Cheese, European Invasion; as we hosted cheese makers and showcased their craft in some special bites.

This was an opportunity for me to put my passion of cooking both sweet and savory with a cheese marshmallow!! Yup. You read that right!! I incorporated Wilde Weide Gouda from @fromagerielamuse into marshmallow, and toasted it to order for every guest tonight. The flavors of the gouda developed in ways that even shocked the cheese makers, and it's definitely something I'm going to play with again!!

I’m super excited to have been given the chance to cook a dinner along side the legends @fourpillarsgin 🙌 We have created a menu that will be matched to some awesome cocktails created by the @arboryeatery bar team🍸 and in the kitchen we are using a mixture of gin, spent botanicals and spent orange throughout the dinner. An example of this is “Christmas Gin Pudding & Breakfast Negroni Marmalade Ice Cream” the pudding is cooked in a caramel made with gin, the ice cream is made with Breakfast Negroni marmalade, we have freeze dried the spent oranges and they will be powdered and dusted on top of the pudding. To finish off we will flambé Christmas gin at the table and pour over the pudding! 🔥🔥. If you are looking for a reason to drink gin on Tuesday 26th, this is it!
