Roasted vegitable spiral! Yum!
3 medium yellow squash
3 medium yellow zucchini
1 plum tomato
2oz finely grated gruyére
2tbs olive oil
1/4 C white wine dry
Sea salt and pepper .
pre-heat oven to 425 (cook time approx 25-30 min.)
Slice whites and tender green of leeks in thin circles. Sauté in 1tbs of olive oil about 3min, until soft, on medium heat.
Add white wine, lower heat and cook till wine evaporates.
Put in bottom of round 8in backing dish.
Thinly sliced squash lengthwise (best use mandoline approx 1/8in) put on baking sheet drizzle with olive oil, season with salt and pepper.
Roast squash about 5 minutes.
Remove from oven, sprinkle with gruyére and let cool.
While squash is cooling slice tomato in rounds, season with salt and pepper.
Take one zucchini ribbon, roll tightly, place in center of dish on top of leeks.
Continue wrapping zucchini and yellow squash ribbons in a circle to edge of dish.
Stuff tomato slices randomly throughout spiral.
Cook in oven at 425 for approx 25-30 minutes until squash is tender and slightly brown.
Sprinkle with additional gruyére as desired.
