Spend time at the @iccedu lab today, working on OJ 🍊🍊clarification. 1. Add pectinex ULtra SPL to your OJ for several hours. SPL is an enzyme that break down pectin structure, need it to be able to clarified OJ. 2. Run the OJ to a centrifuge 3500 Rpm for 15 mn. 3. Strains to a coffee filter. Done you have clarified Oj. Great for cocktail or made a clear OJ gelé. A well designed plate will have sense of Balance. Balance doesn’t necessary mean symmetry. Balance for me means that you look at a plate and it make sense. You understand it you may event think wow that’s nice. But a pate that is confusing to the eye, or is distracting because there is no focal point or too many focal points, are lacking balance.
