When I can’t think of what to make for dinner beans and rice always come to mind. It’s easy. Rice takes 10 minutes, beans canned in water are ready to go! Here’s a simple dish for busy nights:
One cup rice to 2 and a bit cups of veggie broth. Bring to a boil, then cover and simmer on med-low for 10minutes (ish). Meanwhile, saute onions and garlic in some oil. Add 2 cups canned diced tomatoes, 2 tbsp cumin and paprika until the tomatoe juices reduce/thicken. Add kale and chickpeas until the kale softens. Serve over rice with pepper and black olives.
