Here is a simple fish recipe that can be whipped up in about 15-20 minutes, fish cooks really fast and my all time favorite ingredient when making fish is lime or lemon, lime reduces the sharp smell of fish and gives it a super amazing punch, the combination of garlic ginger paste and lime in the fish marinade is magical, let the fish marinate well in the marinade so that the flavors and infuse in well, once you throw the fish in the pan it cooks in no time.
Easy Fish steak with potatoes
Ingredients
300g fish steak (tuna)
1 tablespoon garlic ginger paste
1/2 teaspoon garam
Juice of 2 lime
Salt to taste
3 medium size tomatoes roughly cut
2 tbspn tomato paste
2 onions roughly cut
1 green pepper roughly cut
Handful coriander
4 large potatoes sliced and deep fried
1 tablespoon olive oil
Marinate the fish with lime juice, salt garlic, ginger paste and Garam masala. Rub the marinade well and let it marinate for 30 minutes. While the fish is marinating, in a blender put in the tomatoes, green pepper, onions and coriander and blend into a smooth paste. In a sauce pan pour in 1 tablespoon of olive oil and then pan fry the fish until golden brown for about 3 minutes each side. Add tomato paste to the blended mixture and pour onto the fish. Adjust seasoning with salt. Let it cook until totally reduced and thick, sprinkle some Coriander and serve with the fried potato slices. Enjoy. #chefalimandhry #ramadhan #recipe 📸 @abbas254

How about some egg stuffed meat balls served with carrot rice and tomato gravy

Egg stuffed Meat balls
500g beef mince meat
1 teaspoon black pepper
1 teaspoon curry powder
1/2 teaspoon Cayenne pepper
1 teaspoon minced garlic
Juice of 2 lime
1 egg yolk (reserve the egg whites for the rice)
1 hard boiled egg cut into 8pcs for stuffing
2 tablespoons Oil for frying
In a bowl mix all the ingredients apart from the hard boiled egg.
Make a smooth mixture using your hands flatten a portion of the meat ball mix and place the boiled egg piece in the middle make your meat ball continue with the rest you should get around 8 stuffed meatballs. In a hot non stick pan, pour the oil and pan dear the meat balls on both sides until golden color it will produce its own juices let them cook until the juices evaporated and you can only see the oil bubbles. Once browned finish off in the oven for about 3 minutes at 180 degrees Celsius.
Tomato gravy
1 onion chopped
1 teaspoon garlic ginger
2 fresh tomatoes grated without skin
4 tablespoon tomato page
Juice of one lime
Black pepper
Curry powder
Salt to taste
Oil for frying
In hot pan fry onions until golden brown add in the garlic paste, grated tomato, tomato paste and spices cook until thick add in the lime juice, adjust seasoning with salt and pepper and set aside.

Carrot rice
500g kenyan pishori rice
1/2 onion chopped
1 egg white from the yolk you used in the meat balls (no wasting in the kitchen)
1 carrot grated
1 teaspoon thick soya sauce
1 liter water
Salt to taste
1 tablespoon oil
In a pan add oil fry onions, carrots until soft create some space in the middle add in the egg white let it cook and then scramble the mixture to get a fusion of carrots onions and eggs add in the soya Sauce cook further for a minute then add the rice combine for another minute then pour in the water add salt to taste let it cook until water has evaporated reduce heat to low cover with a tight lid and let it steam for 15 minutes. How about some Matoke ya nazi served with beef. This is the most tasty and very simple way of preparing your favorite green bananas that are readily available in the market. a great tip here is to always get rid of the water that was used to boil the plantains for you to be able to achieve a beautiful natural yellow color of the cooked bananas. here is the recipe

Coconut plaintains served with margarine sauteed beef fillet strips. 1/2kg green plantains (matoke)

70ml thick coconut cream
1 onion sliced

1 lime juice
Coriander
Garlic
Salt to taste
Boil the plantains with water and salt, once soft pour out the excess water, put back the cooked matoke or plantains in the medium heat then add in the sliced onion, add the garlic and lime juice stir to combine, once onions are soft, add the coconut cream and let it cook for 10 minutes,or until the sauce has thicken, adjust seasoning and finish off with chopped coriander.

Beef fillet strips

250g fillet steak

1 tspn Garlic ginger paste

2 tbspn Margarine
Salt to taste
1 tspn ground cumin
1/2 Lime juice
Marinate the fillet steak with lime juice, ground cumin and salt to taste, In a non stick pan melt the margarine, add in the garlic ginger paste saute until combined well then add in the fillet strips and let it cook for about 5 minutes it should produce its own juices let it cook until the juices evaporate and the meat becomes coated with all the flavors from the garlic ginger and margarine. serve over the coconut plantains and enjoy it as a meal on its own. #chefalimandhry #ramadhan #recipe 📸 @abbas254

Hi amazing people let's make some Chicken karahi this is a north indian inspired meal Also known as chicken kadai this is one of the easiest, simple chicken curry dishes that is served in most restaurants, now you can make it at home. This is my own version it is the simplest way of preparing it and it is always loved by everyone for its simplicity all you need to do is just toss up your ingredients let it cook and you are good to go. Kadai or karahi means a wok which is used in the Indian kitchens for most cooking, dishes made in kadai are named after it like kadai chicken, chicken karahi or karahi Chicken. Hope you enjoy this fusion.
Easy Chicken karahi
1 kg Chicken cut into 8 pcs
50g tomato paste
2 tbsp Ginger finely sliced
2 tbsp Garlic and ginger paste
4-5 Green chilies 1 bunch Fresh green coriander
1 teaspoon Crushed cumin seeds
1 teaspoon Black pepper
1 teaspoon Crushed red chili
1/2 teaspoon Turmeric powder
1 tablespoon Royco mchuzi mix
Salt to taste
100ml Plain Buttermilk (lala)
2 tablespoon oil
Heat oil in a wok and add the garlic and ginger paste, stir fry for few seconds.

Then add crushed cumin, black pepper stir well.

Now add chicken, cook for 1-2 minutes.

Add whole green chilies and fresh coriander and mix it well.

Add tomato paste and buttermilk, salt, crushed red chili, royco mchuzi mix and turmeric.

Cook covered with lid till the chicken is almost done, add lime juice cook until the liquid has evaporated and thick.

Garnish with sliced ginger,green chilies and fresh coriander.

Serve hot with chappati or naan.​

Are looking for a fast, different and easy recipe for iftar here is my delicious tikka rice recipe... Tikka rice
1 spring chicken cut into quarters
1 teaspoon garlic ginger paste
1 lime juice
1 tablespoon tomato paste
1 teaspoon honey
1/2 cup plain yoghurt
1/2 teaspoon turmeric
1 teaspoon cayenne pepper
Salt to taste
Marinate the chicken with all the ingredients for an hour or two. Cook over hot non stick pan with a little oil turning on both sides until brown add the remaining marinade on top and bring to a boil once chicken is fully cooked remove and place on a plate then keep aside. Reserve the pan with the remaining gravy from the chicken.
2 cups basmati rice
4 cups water
2 medium carrots grated
1 onion roughly cut
1 medium green pepper cubed
1 teaspoon garlic ginger paste
1 egg
1 tablespoon oil

Put the pan with the remaining gravy over medium heat and add in the onions with 1 tablespoon oil fry until golden brown, add the garlic ginger paste then add in the egg and scramble it using a spatula, add in the carrots and green peppers mix well then go in with the rice fry for 2 minutes and add in water and salt to taste bring to a boil and cover to steam until the water is almost evaporated open the lid and add in the cooked chicken pieces on top then cover and let the rice steam again for 10 minutes over low heat or until the rice is completely cooked. Butterfly Chicken on tomato concusse

1 capon approx 1.2kgs
1 tablespoon garlic ginger paste
Juice of 1 lime
1 teaspoon Cayenne pepper
1 teaspoon oil
Salt to taste
Remove backbone from the chicken and lay it flat on a plate marinate with the garlic ginger paste, lime juice, cayenne pepper and salt to taste. Let it stay with the marinade for 1 hour then on a hot non stick pan add a tablespoon of oil and pan sear the chicken on both sides until golden brown. Once browned remove from pan and put in the oven at 180 degrees Celsius for 30 minutes, reserve the oil that you used to pan fry the chicken. (The oil will have lots of flavor from the chicken)

While the chicken is in the oven let's make some tomato concasse
4 tomatoes cut into wedges
100g tomato paste
1 teaspoon garlic ginger paste
1 onion roughly cut
Juice of 1 lime
1 teaspoon while black pepper
1 teaspoon turmeric powder
Handful of coriander leaves
Salt to taste
In a blender Blend the tomatoes, black pepper, Coriander until smooth

On the same hot pan with the oil that you used to pan sear chicken fry the onions until golden brown, add the garlic ginger paste, turmeric then pour in the blended tomato mixture cook for 5 minutes then add in the tomato paste and lime juice, adjust seasoning with salt and cook until thick. Take the chicken out of the oven and place on top of the sauce serve the chicken with any of your favorite naan or rice. Enjoy #chefalimandhry #Ramadhan #recipe 📸 @abbas254

Ramadhan Kareem Today we whipped up some dope iftar recipes with @willisraburu live on @citizentvkenya Here is the recipe of Muhogo wa nazi na samaki wa kukaanga.
Muhogo wa nazi (cassava in coconut sauce)
1kg fresh Kenyan cassava
250ml heavy coconut milk
1 ¼ teaspoon salt
4 whole chilies
2 medium onions chopped
2 liters water (for boiling the cassava)
500g boiled beef until tender (with stock)
Peel the fresh cassava and clean thoroughly in water, cut to desired cubes and remove all the centre threads, In a pan over medium heat boil the water and then add the cassava, cover to cook over a medium heat for about 30 minutes or until cassava is soft.
Drain the water then add in the boiled beef with its stock bring to a boil add the onions, coconut milk and the salt cook over a medium heat for 10 minutes.
Reduce the heat, add the whole chilies and cook for a further 10 minutes. Garnish with some sliced red chilies if you wish, Serve as a meal on its own.
Samaki wa kukanga
2 whole tilapia cut into 3 pieces each
2 teaspoons garlic ginger paste
1 whole green chilli minced
Juice of 3 lime
1/2 teaspoon cayenne pepper
Salt to taste
Oil for deep frying
Marinate the fish with the above ingredients let it stay in the marinade for about an hour or so then deep fat fry until golden brown and crispy. Then vurunya with muhogo wa nazi. Watch Willis akivurunya on my story now. #chefalimandhry #Ramadhan #recipes

How about some Sticky Honey soy chicken wings here is the recipe... 1 dozen Chicken wings, cut into drumettes and wingettes
Juice of 2 lime
2 Tablespoons Soy sauce
4 Tablespoons Honey
½ teaspoon Garlic, minced
½ teaspoon Ginger, minced
¼ teaspoon Sesame oil
1 teaspoon Cornstarch
2 teaspoon white vinegar
Salt and pepper to taste
2 tablespoons oil for frying
sesame seeds

Season the wings with salt pepper and lime juice. Pan fry over medium heat until cooked on both sides and browned.
In a sauce pan, over medium heat combine soy sauce, honey, garlic, ginger and sesame oil, and bring them to a boil. 
Make a thin paste with the cornstarch and vinegar and then add it to the sauce when it boils. Toss in the cooked chicken wings and cook until the sauce coats the chicken wings and becomes thick. Sprinkle sesame seeds on top and enjoy.​ #Chefalimandhry #Recipes
