Here is my delicious Sweet Butternut in coconut recipe, in Swahili we call it Matango ya nazi or Mayungu ya nazi depends where you come from? How do you call butternut or pumpkin in your language? Tell me on the comments below!
Sweet butternut in coconut sauce
3/4 cup sugar
2 medium butternuts peeled and cut into cubes
130ml coconut cream
1 tspn vanilla extract
5 Cardamom cloves crashed
300ml milk

100g mixed dried fruits e.g mixed raisins, coconut flakes
In a pan over medium heat pour in the milk, sugar, butternut, vanilla, cardamom and half of the coconut cream. Bring to a boil and Let it cook on medium heat until the liquid is almost evaporated and butternut is soft, be checking it often since the milk sometimes could overflow while cooking on high heat you will need to be adjusting the temperatures to low at times, once the butternut is soft add in the remaining coconut cream and let it simmer for two minutes. 750g tilapia fish fillets
1 tablespoon garlic ginger paste
Juice of 1 lime
1 teaspoon Cayenne pepper
1 teaspoon oil
Salt to taste
marinate the Fish with the garlic ginger paste, lime juice, cayenne pepper and salt to taste. Let it stay with the marinade for 1 hour then pan sear the fish on both sides until golden brown about 5 minutes each side, Once browned and cooked remove from the pan and set aside.

let's make some tomato concasse
4 tomatoes cut into wedges
100g tomato paste
1 teaspoon garlic ginger paste
1 onion roughly cut
1 tablespoon oil
Juice of 1 lime
1 teaspoon while black pepper
1 teaspoon turmeric powder
Handful of coriander leaves
Salt to taste
In a blender Blend the tomatoes, black pepper, Coriander until smooth

In a hot pan with oil fry the onions until golden brown, add the garlic ginger paste, turmeric then pour in the blended tomato mixture cook for 5 minutes then add in the tomato paste and lime juice, adjust seasoning with salt and cook until thick. place the cooked fish on top of the sauce serve the fish with any of your favorite naan or chapati. Festive season is almost here how about some rice and beef mince stuffed roasted bell peppers!!! A very simple yet fun to make recipe! Here is what you will need to prepare this recipe... Ingredients
500g mince beef
50g tomato paste
1 teaspoon garlic ginger paste
1 teaspoon Garam Masala
Salt to taste
1 teaspoon oregano
Coriander for garnish
50g grated mozzarella
1 Red large capsicum (sweet pepper)
1 green large capsicum
1 yellow large capsicum
Juice of one lime
1 bowl cooked rice about 150g
1 tablespoon vegetable oil
1/2 cup vinegar

In a pan over medium heat put a tablespoon of oil and pour in the garlic then add in the mince meat, go in with some oregano, Garam Masala and salt to taste.
Add in lime juice and tomato paste
Let it cook for 10 minutes,
While the mince is cooking trim the bottom of the peppers so that it can stand on its own then slice the top and remove the seeds to create space for the filling.
Take a spoon and layer the rice half full in the peppers and fill the top with the cooked mince beef.. Put the stuffed peppers in a baking tray and pour the vinegar into the tray and bake in the oven at 180 degrees Celsius for 55 minutes, then remove and top with cheese and put it back in the oven for 5 more minutes.
Garnish with black pepper and Coriander. Serve. #ChefAliMandhry 📸 @abbas254
