Babu bhai kababwale.
In continuation of my #kababdiaries of Delhi, another person deserving a stellar shout out is babu bhai.
Just google maps the location and keep walking. In a narrow bustling lane nestled in a small shop sits this guy, no less than an artist.
His unique method of prepping the kababs is a sight to behold. He does not use any binding agent for the meat.
When he slaps the meat onto the skewers, he takes some wet string and ties it on the meat in a flash.
Once the kababs are cooked, he slides the kabab onto a plate and in one swift magical motion takes the strings out.
You gotta see it to believe it.
Theatrics aside, his kababs are amazing in taste. For me, second only to Moinuddin kababs.
Soft, succulent and spicy. There is hardly anything else which feels so good in the tummy in the cold winters. Brave the crowd, the narrow lanes and treat yourself to a sight and taste no one in the city can give you.
